What apples to pick now, mid to late August
In mid-august, the apple varieties that are at ripeness for picking are Mollies Delicious, Jersey Macs (shown here), Earligolds, Akanes, Paula Reds, and Sweetangos. 
Coming up soon in Early September will be ideal picking season for Mcintosh, Jonathans, Honey Crips, Cortlands, Jonalicious, and Gingergolds.
It is important to pick apples when in season and not before or after. Unfortunately more popular varieties, at public orchards, are often picked prematurely, leaving slim pickings for when actually peak season.
